All Over This Kitchen

Lately I haven't been able to keep up on this blog about what has been going in the kitchen.  I have been snapping pictures as I go.
1. I have been freezing some peas and lots of pesto.

2.  Before the heatwave there was a lot going in and out of the oven.
One night for dinner I had a few small golden beets, a couple of turnips and carrots.  I put them all in a baking dish tossed with salt, olive oil and chopped fresh parsley.  Cooked them at 350 degrees for 20-30 minutes till tender.  (I don't remember how long but as long they come out tender.)
Kale chips :)

Made pizza with some of the pesto.
Whenever we needed to cool off there was ice cream with chocolate hard shell.
More fresh foods from the csa.

These pole beans were good.  Here's how I made them but next time I think I'll use olive oil instead of a dairy free margarine.

Pole Beans with Green Onions
1 pound young pole green beans (wash, remove string and cut up into pieces)
1 bunch of green onions chopped
2  garlic cloves crushed or chopped really small
1 tablespoon dairy free margarine, butter or olive oil

Par boil beans in lightly salted water until tender you want them to still be crip and then drain.  What I did was bring a pot of salted water to a boil and then dropped the beans in and cooked  them for 5 minutes and then drained.  In a pan melt butter or margarine and then add garlic and onions cook till clear.  (If using oil just heat 1 tablespoon of oil.) Add beans to mixture and saute 2-3 minutes.  Serve and enjoy.

That night the beans went nicely with an orzo salad and another salad made of tomatoes, beets and celery leaves.

3.  I just showed you all this yummy stuff in my kitchen but not everything comes out so great.  So here I have these beet brownies.  With all the substitutions they didn't come out right. The brownies look good in this pan because they wouldn't come out. They were too hard to cut.  Eventually the whole thing popped right out and into the trash.

So this is pretty much what has been going here.

You have been busy in the kitchen! I never thought of freezing pesto on a cookie sheet like that. I've used ice cube trays and jars. Does it get brown or is it okay since you place it in the freezer right away?

And that chocolate sauce - did you make that? I would love the recipe. Thanks.
